Bodegas Timanfaya is based in Mácher, in the municipality of Tías, and its cellar is the landscape itself: ageing takes place inside a cave hollowed out of volcanic ground beneath Timanfaya ash. The winery joined the Lanzarote DO in 1999 and has kept a family, artisan scale, working in small lots. Grapes come from century-old vineyards in La Geria, some planted more than 250 years ago, farmed with traditional methods that follow the plant's own rhythm. Winemaker Alberto González Plasencia leads a team that links vine growing with tourism and environmental care. Its best-known bottle is a sweet reserva from 1999 aged in the so-called Cueva de Lorenzo, which has collected national and international awards. A visit goes beyond a tasting: there are ecotourism experiences, tasting courses and made-to-measure food-and-wine events. It is worth the detour if you want to read the landscape: walk the historic vineyards of La Geria and finish with a glass in a lava setting.
