Bodega Stratvs, in Tías, builds its range around Malvasía Volcánica, alongside Moscatel de Alejandría, Baboso Negro, Syrah, Tempranillo and Listán Blanco. The aim throughout is to get the volcanic soil, the dry climate and the trade winds into the glass: wines with a salty, mineral undertow. The whites come in three registers: a fresh, fruit-forward dry Malvasía; Finca Las Palmeras, barrel-aged on its own lees; and Diego a Secas, which spends time in French oak foudre, adding vanilla and texture without burying the fruit. A semi-sweet blends Moscatel and Malvasía. Among the reds, Sutil is a limited Baboso Negro from century-old pre-phylloxera vines in La Geria; the young red is Syrah and Tempranillo by carbonic maceration; and Finca de Uga is a single-varietal Syrah, whole-bunch fermented and aged in Bordeaux barrels. The sweets are the most personal chapter: a Moscatel from overripe grapes with at least fifteen years in cask, and a Malvasía from own-rooted vines with no added sugar. The winery takes visitors for tours and tastings and has space for food and celebrations. Worth the stop if you want to taste the island rather than just drink it.
